Pictures and Recipes from Christmas candies!

Peppermint Bark

8oz Dark Chocolate
8oz white Chocolate
4oz crushed peppermint or candy canes

With the candy canes you can choose your favorite I went with peppermint. But feel free to use spearmint or anything else.

Step 1. Crush the candy canes and put them in a bowl.
Step 2 temper or melt dark chocolate.
Step 3. spread  the Dark Chocolate out in an even layer and make sure you have it on a flat surface. let the chocolate come to a tacky state or let it dry completely.
Step 4. Temper or melt your White Chocolate and mix with the crushed candy canes. Afterwards spread evenly on top of the Dark Chocolate.
Step 5. take a knife and cut into even squares. And then break the bark apart when it is dry.

Peanut Brittle

14oz Sugar
6oz water
10oz Corn syrup
16 oz Salted Peanuts
1oz butter
1/4 oz baking soda
vanilla

1. Combine the Sugar and the water in a saucepan and bring to a boil.
2.Add the Corn syrup and continue to cook to 239F
3.Then add the peanuts and cook to311F over med heat. While stir occasionally
4. Remove from heat add butter, vanilla and baking soda and stir well
5. Pour the entire mixture onto a well oiled  and salted surface. then spread thin.

Christmas Candies

Its a little past Christmas I know!
But I thought i would still put our latest project on here. Over the Holidays I got my hands into making some old fashioned candies for friends and family as gifts.
I started with making some tasty peanut brittle. After making the peanut brittle I then made a holiday favorite, peppermint bark with both white and dark chocolate. Lastly I made some milk and dark peanut butter cups and homemade kitkats.
While making all of these tasty treasures. I was also in the process of making candied oranges and lemons which took the whole month of December to make. At the end of the month the oranges and lemons were drained for a few days and then dipped in either dark chocolate or sugar. While these were all fun to make it was more enjoyable to give them away in the end and see everyone enjoy the candy.

Sid the Science kid

This was such a fun cake to do. I also got to learn how to mold a 3D object which i had never done before.

The first thing I did was of course bake off my cake. I used a 10" square cake pan and made a yellow cake. Once my cake came out I let it cool, then I froze it. While the cake was freezing I went to work making a chocolate buttercream so that I could fill the cake and mask it. after I filled and masked the cake I then froze the cake again.

About a week ago I made homemade fondant. Which I used to make sid and cover the cake. The first thing I did was look up a picture Sid. Once I found the picture i liked i printed it and went from there.
